FSA Foodies – November 2017

Summer is great, but by the time September rolls around, we are all awaiting anxiously for fall. It’s become a joke that we all know fall is officially here when Starbucks releases its Pumpkin Latte! Because let’s be honest, pumpkins are the best part of fall! During the holiday season, there are lots of parties, lots of food, and lots of drinks, so here are some healthy pumpkin recipes to get our fix without the fat!
Pumpkin Pie Green Smoothie
Ingredients
- 3/4 cup pumpkin puree
- 1/4 ripe avocado
- 2 large handfuls fresh spinach
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/2 teaspoon vanilla
- 5 soft Medjool dates, pitted
- 1 1/2 cups water or almond milk
- 2 handfuls of ice
Blend it all together and enjoy!
Roasted Pumpkin Soup
- Medium-size pumpkin, diced into half-moon pieces
- 1 onion, peeled and dice
- 8 cloves of garlic, peeled and smashed
- 2 cups of water
- 1 cup coconut milk
- 1 sprig of fresh Rosemary
- 2 tbsp olive oil
- salt and pepper to taste
Directions
Roast the pumpkin for 15 minutes at 350 degrees. Take it out, let cool, then cut it up into cubes. Sauté the onions and garlic in the olive oil for 2 minutes then add the pumpkin. Add the water and bring to a boil, cover and let simmer for about 8 minutes. Once the pumpkin softens, turn off the heat, let cool and blend. Once blended, re heat and add the milk. Now light a fire, get your robe and comfy pajamas on, turn on your favorite show and enjoy!
